My smoked turkey last week was a huge success. I am going to be using that smoker quite a bit in my future!
Selling my tickets this week to go on an annual camping trip to SE Ohio; AEP Recreation lands southeast of Zanesville. Free camping, hiking, fishing, hunting etc. It's a great getaway not too far from Columbus.
In the past we have done a hog roast - Norcal, no, not like we used to do. However, the group I normally go with (10 of us) was cuty down to only 4 this year (outside circumstances led many of my friends to not be able to come). So, we are making chicken stew instead.
Chicken Stew:
4 boneless, skinless chicken breasts, cubed
4 potatoes, skinned and cubed
6 whole carrots, chopped (1 take 2 carrots and finely chop them, the other 4 carrots I chop in bigger pieces)
1 large white onion, chopped
4 garlic cloves, minced
4-5 celery stocks, chopped
2 cans of corn, drained
3 qt. chicken stock
1 can cream of chicken soup
butter
salt and pepper to taste
1 tbsp oregano
pinch of nutmeg
a few bay leaves
flour
Place cooking pot (I have a huge stock pot) over coals, add some butter, onion, carrots, celery, and garlic and cook down, about 15 minutes. Add the rest of the ingredients and simmer at least 2 hours. You don't want a rolling boil, so check periodically and stir. Add some water if needed (not enough broth for your liking). Before you are ready to eat, make a roux: mix flour and melted butter in a seperate frying pan. You want the consistency to look like wet sand. Add to the stew and stir, wait 10 minutes or so for the stew to thicken up to your liking and enjoy.
