Tailgate last week was simply amazing. This week, we sold our tickets to some friends and plan to grill out at home. I'm making some tri tip steak, twice baked potatoes, salad, and another vegetable - maybe some broccoli with a cheddar cheese sauce topping.
For the tri tip, I usually apply this as a dry rub:
Sear both sides with direct heat on the charcoal grill, then move and cook indirectly until done.
The twice baked potatoes have sour cream, bacon, and cheddar in them...can't wait!
I ended up with a ton of beer (3 cases worth of bud light, Michelob ultra, and coronas) and a bottle of crown, woodford, and tito's last week after the tailgate, so I have plenty to wash it down with.
