Playing Tulane on Saturday, so figured I would make a Cajun Shrimp and Sausage bake:
Ingredients:
8 Andouille sausages, chopped
2 lbs. shrimp, peeled and de-veined
8 red potatoes, quartered
4 pieces corn, quartered
4 tablespoons oil, divided
2 tablespoons butter, cubed
8 cloves garlic, minced
Cajun Spice Mix:
4 teaspoons garlic powder
5 teaspoons paprika
3 teaspoons dried oregano
2 teaspoons onion powder
3 teaspoons dried thyme
1 teaspoon red pepper flakes
2 teaspoons cayenne pepper
4 teaspoons salt
2 teaspoons black pepper
fresh parsley, chopped
lemon wedges
Directions:
1. Preheat oven to 375F.
2. In a small bowl, mix up the Cajun spices.
3. In a baking dish, combine potatoes, corn, 4 garlic cloves, 2 tablespoons of oil, and 1 tablespoon of the cajun spice mix.
4. Mix until the vegetables are coated. Place butter on top and bake for 25 minutes to half an hour.
5. In a separate bowl, combine the sausage, shrimp, garlic, oil, and 1 tablespoon of the Cajun spice and mix.
7. Add the sausage and shrimp into the same baking dish as the corn and potatoes, then bake for another 15 minutes.
8. Top with fresh parsley. Serve with lemon wedges, rice, and plenty of beer!
