We're BAAAAACCCCKKK!
Good Morning Dubbers, we are back. That's right, tailgate fare is back for another year of tasty treats to enjoy prior to and during our beloved Buckeye games. Starting off with a Thursday night matchup with the gophers is a highly unusual way to start the season, but it's buckeye football and our 9-month long wait is finally over. I like to make something based off our opponent each week, and to be honest I can't remember ever making this dish, which apparently is a minnnesoda delicacy: Tater Tot Hotdish. It's basically sloppy joe, swapping the bbq sauce for creamy goodness, covered in tater tots and cheese. What can go wrong, right? It looks even better than it sounds too:

So here we go (not my recipe, found it on reddit):
Tater Tot Hotdish - A Minnesota classic, you betcha... Cheap, simple, and super satisfying.
Ingredients:
- 1 lb ground beef
- 1 medium onion
- 16 oz frozen vegetables (Any vegetable, really. I recommend mixed veggies with corn/peas/carrots)
- 16 oz frozen tater tots (not negotiable)
- 1 10.5 oz can cream of chicken soup
- 1 10.5 oz can cream of mushroom soup
- Milk
- Shredded cheddar cheese
- Salt and pepper
- (optional) Crunchy onions
Instructions:
- In a frying pan, brown the beef with the onion (chopped). Salt and pepper accordingly. Drain the fat.
- In a 9x13 baking dish, combine the two cans of soup, the frozen veggies (don't need to be thawed), and the beef/onion mix, and add a couple splashes of milk (probably about 1/4 to 1/2 cup).
- Salt and pepper to taste and mix it all together
- Cover it all with a layer of frozen tater tots (also don't need to be thawed), but do not mix it in
- Bake it in the oven at 350 F for 25-30 minutes
- Take it out of the oven and add a layer of shredded cheese over it all. Crunchy onions too if that floats your boat.
- Put it back in the oven for another 10-15 minutes until the cheese is all melted
- Take it out of the oven and enjoy!
