2017 Tailgate Fare Week 9

Is it Saturday yet? I think that this has been the longest bye week I can ever remember having to endure.  Of course, when you’re waiting for your favorite team to hand out some revenge in the form of a big slice of humble pie, it can have that affect.

I have debated what dish would be worthy of such a game.  I wasn’t sure if a booze concoction would be appropriate, or a solid entrée; perhaps some good finger food, or who doesn’t love a good dip?  I wasn’t sure which way to go, but I knew I wanted it to be good.

But, then it hit me.  I had one of my favorites in reserve, and now just might be the perfect time to break this one out.  It’s not fancy, and it’s not complicated – it’s just good.

BURRITOS

INGREDIENTS

  • 2 to 2 1/2 pounds of ground beef
  • 1 package taco seasoning
  • 1 can ( 4 ounces) chopped green chilies
  • 1/2 cup water
  • 1/2 teaspoon Worcestershire sauce
  • 1 can ( 17.5 ounces) refried beans
  • 1 dozen burrito sized tortilla or 2 dozen soft taco sized tortilla
  • 2 cups shredded cheddar cheese
  • 1 jar salsa

DIRECTIONS

  • Brown ground beef and drain.
  • Add taco seasoning, green chilies, water, Worcestershire sauce, and beans.
  • Heat thoroughly.
  • Place about 2 tablespoons of meat mixture on one side of a tortilla.
  • Top with 2 to 3 tablespoons of cheese and 1 tablespoon of salsa.
  • Roll and wrap individually in foil.
  • Store in refrigerator until ready to bake.
  • Bake for 25 minutes at 350 degrees.

PRO TIPS

  • These are perfect to take to a tailgate in a crock pot.  Just replace the baking time with 45-60 minutes on LOW, then leave on warm.  If you’re eating them at home, they are perfect for grazing, just keep them warm.
  • Just eyeball the mixture when you’re making the burritos, it all works out in the end.
  • Don’t skimp on the salsa.
  • I’ve always used the soft taco sized tortillas, because it makes more.
  • Feel free to bump the ground beef up to 3 lbs, just bump up the other ingredients accordingly to maintain a good mixture.  It doesn’t take much, just a little more of each.
