The Granddaddy of Them All is upon us. What are y'all fixing?
We are having our traditional roasted pork with applesauce, sauerkraut, spinach, mashed potatoes, and cornbread. Washing everything down with the champagne of beers while OSU kicks ass!
Apple Roasted Pork:
Ingredients
3 tbsp. olive oil
pork tenderloin
salt and pepper to taste
2 tspn. cinnamon
1 cup apple cider vinegar
1 cup applesauce
1 medium onion, chopped
2 garlic cloves, minced
2 apples, sliced
3 tbsp. dijon mustard
2 tspn. rosemary
1/2 cup brown sugar
Mix all spices, oil, garlic, applesauce, apple cider vinegar, mustard in a bowl; will make a paste. Coat the pork loin in the paste, top with chopped onions and sliced apples. Put in baking dish and place in the oven, uncovered. Bake at 350F for 1.5 to 2 hours.
