2022 TAILGATE FARE - WEEK 11 - SMOKED BREAKFAST BURRITOS

Good morning Dubbers! As Rafiki once said, "it is time"... for the best thread of the week, the tailgate fare. I think everyone wants to forget last week and how we struggled against NW and the strange voodoo that hampered our offense (weather/playcalling/effort etc. - a win is a win). Yes, we struggled, but we didn't lose so can we please let's move on from bashing each other/the team trying to figure out the running game? OK thanks!

This week, the mighty hoosiers are on tap for a throttling. I will be camping in SE Ohio (as is tradition this weekend every year), so coming up with an camp recipe for a nooner was actually easy. I am sure everyone knows how to make a good breakfast burrito, but here's what we will be making and these are awesome - something about cooking over open flame that gives some extra flavor!

Ingredients

  • Tortilla shells
  • 1 dozen eggs
  • 1 lb bacon
  • 1 lb breakfast sausage
  • 1 can of Rotel
  • Crisp Rounds (or mini tots/hash browns, I just find the crisp rounds work best)
  • 1 green pepper
  • 1 red pepper
  • 1 small onion
  • butter
  • salt/pepper to taste
  • salsa/sour cream/mayo etc. - whatever condiments you want
  • 1 very large cast iron skillet/pan

Directions:

  • Cook the bacon in a cast iron skillet, over the fire, make sure to keep the grease.
  • While bacon is cooking, finely chop up the onion and peppers.
  • When bacon is done, take half and crush up, setting aside. Snack on the rest.
  • Next, saute the onions and peppers in the bacon grease, can add a little butter if you want.
  • After a few minutes, add the rotel and cook out the juice.
  • At this point, the veggies should be soft/starting to blacken. Pull out and set aside, leaving the grease in the pan.
  • Add the crisp rounds, and more butter. Cook for a few minutes then crush up with the spatula.
  • As the taters start to crisp up, add the sausage and cook together. 
  • When the sausage is almost done, the potatoes should be done at this point too, add back in the crushed bacon and veggies. Everything but the eggs should be in the pan at this point (minus half a lb of bacon which is for snacking on)
  • With all this cooking together, crack the eggs into a bowl. Season with salt and pepper, add cheese, and whisk up.
  • Add the eggs to the mixture in the pan, and cook for a few more minutes until the eggs are scrambled.
  • Pull aside, scoop some of the mixture into a burrito, add whatever condiments you want, more cheese, and enjoy.

Pro Tips

  • Doing this all in 1 pan because we are camping. If you are at home, you can cook several things in the other pans using your smoker or charcoal grill to speed up the process, just combine it all into 1 thing and mix at the end. If you don't have a smoker/charcoal grill, just use your stove - you won't get the smoke flavor but these are still damn tasty.
  • Toast/warm up the tortilla shells before assembling.
  • Add some jalapenos for spice, use spicy sausage, more bacon, add ham etc. - these things are easy to make and the recipe is flexible.
  • Serve with coffee, spiked with baileys/kahlua
