Growing up my family roasted a spring lamb on a spit or when using the oven a leg of lamb for Easter, traditionally. Today I'm doing my own honey glazed ham since its just my wife and I. Accompanied with sautéed spinach in garlic and olive oil, mashed tater's and casear salad. If you are doing lamb try some fresh dill on it. being married to a Russian (they put dill literally on everything) turned me on to fresh dill on potato's and salad as well.
