I know what you were thinking when you clicked on the thread, KevinJ has done gone all Honey Badger on us, sorry I don't partake. I'm smoking an Italian Fatty wrapped in Bacon.
I've never done Italian Sausage before, I usually like to use ground pork, going with Bell Pepper, Red Onion and Provolone Cheese (you can use whatever you want). Mixed up a little Rub for it, Turbinado Sugar, Paprika, Kosher Salt, Black and Red Pepper, Granulated Garlic.
Flattened out a pound of Hot Italian Sausage sprinkled on some rub and made my Bacon Weave with Thick Cut Applewood Smoked Bacon.
